If you haven’t explored TVP yet, you will enjoy this simple way to add a vegetarian meal to your menu. With the addition of extra chopped onions and diced tomatoes you will see how easy it is to use items from the list and add extra flavor as well.
Ingredients for TVP Tacos
2 cups water, beef or vegetable broth, or tomato juice
2 cups Textured Vegetable Protein
2 Tablespoons Canola oil
1/2 cup taco seasoning (or your own blend of chili powder, cumin, oregano, and black pepper)
2 cloves chopped garlic
1 cup salsa + 2 T tomato paste
Directions for TVP Tacos
In a large skillet, heat liquid over medium heat and add the TVP, stir well and cover. Allow the TVP to reconstitute for 2-3 minutes. Remove from heat and transfer to a large bowl. Let cool slightly, and blot excess moisture using absorbent paper towels.
Heat oil in skillet and add theTVP, garlic, and spices. Cook for 3-5 minutes, stirring frequently. Add salsa and tomato paste and allow to cook for another 3-5 minutes, stirring frequently. Use your favorite toppings and serve wrapped in warm tortillas. This mixture also freezes well.
Chopped onions, tomatoes, sour cream, cheese, lettuce, diced avocado, or chopped chilies. Don’t forget the lime!
