Tropical Shrimp and Papaya Salad
1 lb. medium cooked shrimp, peeled and deveined
1 can (14-19 oz.) black beans, rinsed well and drained
1 small jicama, peeled and julienned, (about 1 ½ c)
1 ripe papaya, halved, peeled, seeded, and chopped
2 kiwi fruit, peeled and sliced
½ red bell pepper, julienned
½ medium red onion, thinly sliced
½ c cilantro leaves – optional
Avocado – optional
¼ c extra virgin olive oil, or to taste
Balsamic or flavored vinegar, to taste
Try this high protein, high fiber salad alone, or served on a bed of your favorite greens. It’s low in carbs, and low in sodium.
