pineapple-salsa-recipeEnjoy this week’s recipe for a great nutritious sweet and spicy Pineapple Salsa that can be used with fish, chicken, or tofu, straight off the grill, or added as a filling for tacos.

1 ½ cups pineapple – diced

1 small green pepper, diced

1 medium red onion, diced

2 cloves garlic, minced

2 teaspoons fresh ginger root – minced, or grated

1/8 teaspoon salt

1 cup tomato — diced, seeded, chopped

1 lemon or lime, juiced

1 jalapeño pepper, seeded & chopped (optional)

Garnish with cilantro or sliced green onions
Mix all ingredients together in small bowl—that’s it!  Refrigerate before serving.
