Spinach Waldorf salad Ingredients:
½ cup Greek Yogurt
2 T. apple juice concentrate
¼ tsp. ground cinnamon
1 tsp. Dijon mustard
2 red apples, cubed
2 T lemon juice
½ cup seedless grapes
½ chopped celery
½ chopped red onion
½ cup chopped walnuts
4 cups spinach
Spinach Waldorf salad Preparation:
1) Toss apples in lemon juice.
2) Mix yogurt, concentrate, cinnamon and Dijon mustard in large mixing bowl.
3) Fold in cubed apple, grapes, celery, onion, and walnuts.
4) Place spinach in serving size bowls and top with salad mixture.
