To your taste, chop into bite size pieces and mix any of the following vegetables:
Cabbage-Red, green or a mixture

Broccoli

Cauliflower

Radishes

Carrots

Red peppers

Cucumber

Jicama

Garnishes

Toasted almonds

Walnuts

Grated cheese

Sun flower seeds

Hard boiled Egg

Creamy dressings such as low fat ranch, creamy Caesar, or a light blue cheese compliment this salad well, and will keep it crisp, as long as there isn’t too much vinegar.
