Bright and flavorful, this fun salad will add color and an exotic taste to your meal. It’s sweet, tart and tangy and extremely easy to make.
- 3 persimmons, peeled, chopped (1/2 inch pieces)
- ¾ cup pomegranate seeds
- 1 Granny Smith Fuji apple, peeled, cored, chopped , ( ¼ -½ inch pieces)
- 8-10 fresh mint, thinly sliced crosswise
- 2 teaspoons lemon juice
- 1 teaspoon honey
Gently toss all ingredients together.
Yields approximately 4 servings
