Ingredients for Edamame Hummus Dip

2 cups frozen edamame, cooked according to package instructions

1 cup silken tofu, drained, or one cup Greek yogurt

½ – 1 tsp ground cumin, to taste

3 cloves garlic

¼ cup olive oil

1/3 cup fresh lemon juice

Salt and pepper, to taste

Directions for Edamame Hummus Dip

Set 1/3 cup edamame aside for garnish.

Place remaining ingredients in food processor and process until smooth, about 2 minutes.

Transfer to serving bowl and garnish with remaining edamame.

Serve with pita chips or your favorite cracker.
