curried celery soupCurried Celery and Apple Soup

• vegetable oil
• ½ onion, diced
• 1 carrot, peeled and diced
• 3 celery stalks, diced
• 1 potato, diced
• 1/2 cup celery leaves, chopped
• 1 large garlic clove, minced
• ½ apple, diced
• 2 cups of broth (I used water and 1 bullion cube)
• 2 teaspoons curry powder
• 1 teaspoon ground cumin
• 1 teaspoon thyme
• salt and pepper

Sauté the onion, carrot, and celery in olive or canola oil for about 10 minutes. Add the potatoes, sauté for another 5 minutes. Add the garlic, the apple and the spices; continue to sauté for a few more minutes.

At this point add the broth, scrape the bottom of the pan and bring to a simmer. Cook for another 10 minutes and then add the celery leaves and cook for another 5 minutes.
You can blend the whole thing, or just part of it. I like to keep part of it chunky to enjoy the different textures.
