Ingredients for Chunky Coconut Mashed Sweet Potatoes
2 medium size sweet potatoes
1 T coconut oil
2T flaked coconut
Allspice, to taste*
*If you don’t have allspice, you can easily use cinnamon, nutmeg, cloves, or even some pumpkin pie spice.
Instructions for Chunky Coconut Mashed Sweet Potatoes
Scrub potatoes well. I like to leave the skin on for fiber and nutrients.
Dice in to 1 inch cubes.
Steam until cooked, but not mushy—about 15-20 minutes.
Transfer to bowl, add remaining ingredients. You can mash by just using a spoon or fork, if you prefer chunky style, or use a hand mixer for a smoother consistency.
