Chocolate Coconut Energy BarsThis recipe is loaded with nutrients, protein, fiber, and antioxidants and is a perfect pick-me-up or pre-exercise snack.

½ C dates, pitted
1/3 C almond butter
¼ C cocoa or cacao powder
1 tbsp honey
1/2 cup shredded unsweetened coconut

Optional:

2 tbsp sunflower seeds
2 tbsp chia or flax seeds
½ tsp vanilla extract
Stevia (optional)

Blend everything together and roll into balls. Store in the fridge and enjoy!

You can easily double the recipe and balls should stay fresh up to 2 weeks in an airtight container.
